Do you have this recipe?

I am looking for a recipe that my husband's mom used to make. It is chicken or turkey with noodle dumplings. He explains it as being a thick gravy(not soup). Also he remembers her rolling out the dumplings like noodles and they expanded. They were maybe a couple inches long. He also said that he doesn't believe it had vegetables in it. She passed away and didn't leave any of her recipes and I would love to make these for him. I have searched the internet already and can't seem to find anything, the recipes I've tried haven't been what he remembers.If you have anything like this please help. Thanks in advance.

This is a thick gravyish soup my grandma made, it has strips in it too, she would sometimes add different things to it, like celery or onion but here is the basic recipe. She would also sometimes make the strips with yeast but she said she would have to use her biggest pot when she did that.
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon poultry seasoning
1/4 cup shortening
1 egg, beaten
1/4 cup milk
3 cups chicken broth
1 1/2 cup cooked chicken (cubed or torn)
In a bowl, combine flour,s alt and poultry seasoning; cut in shortening until crumbly. Combine egg and milk; stir into flour mixture just until combined. On a heavily floured surface, roll dough to 1/4-in. thickness. Cut into 1-in. strips; cut strips into 2-in. lengths. In a large saucepan, bring broth to a boil. Add chicken. Reduce heat; drop dumplings onto simmering broth. Cover and simmer for 15-20 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift the lid while simmering).
