Hi! I am looking for a recipe for a Spanish cookie sweetened with honey, then decorated with whole pine nuts

...around the rim of the cookie. Have you seen a recipe for such?

What kind of honey would stand up to the pairing with pine nuts? Orange blossom, do you think? Lavendar?

And, would you brush the top of the cookie with anything? Or just the pine nuts alone: with honey, maybe?

330g ground almonds
330g caster sugar
1-2 potatoes to a weight of 330g unpeeled
1-2 egg yolks
pine kernels to garnish
orange blossom honey to glaze

Pre-heat your oven to 180°C


Boil the potatoes in their skins until they are done. Drain an dry for a minute or so. While they are still hot -- this is essential so use gloves to protect your hands -- peel the potatoes, break them up and work through a fine tamis or fine ricer. Work the sugar into the potato to form a paste with the sugar that will melt with the residual heat.

Add the ground almonds and the egg yolk; work in well. Add the second yolk if the paste remains too stiff, add a little more ground almond if (having used one yolk) it is too wet. Form into little balls, slightly flattened and place on a prepared baking sheet. Coat with egg white you have first slightly slackened with a fork (*not* beaten), and decorate with the pine nuts.

Place in the oven and bake until the pine nuts are golden brown. When done, rack and brush at once with warmed orange blossom honey, and leave to cool.

For an alternative finish, whisk up a mixture of egg, milk and sugar, interrupt the baking, brush the pastas with this mixture and continue baking in the oven for a final 8 minutes or so.
