Has anyone a recipe for Gateau Charentais?!


Question:

Has anyone a recipe for Gateau Charentais?

Whilst reading a French travel magazine several years back, I saw mention of a Gateau Charentais, a specialty of the Charentes region of France.

I recall it was a kind of cookie, rather than a gateau, but I am not sure of that.

It had a piece of citron on top, and then was baked

Gateau Charentais
=================

4 eggs
sugar
flour
100g almonds, finely chopped
50g almonds, coarsely chopped

Weigh the 4 eggs, and take their combined weight in sugar and flour. Separate the eggs, and beat the 4 yolks with the sugar until the mixture pales completely. Add the sifted flour in small quantities at a time. Next, in a separate, completely grease free bowl, whisk the egg whites to soft peaks. Fold in, followed by 100g of the chopped almonds.

Decant the mixture into a buttered mould. Sprinkle the surface of the mixture with the remaining 50g, coarsely chopped almonds. Dust with icing sugar

Bake in a moderate oven for 20 minutes.


Gateau Charentais
=================

Peser 4 oeufs et prendre même poids de sucre et de farine.
Battre les 4 Jaune avec le sucre jusqu'à ce que le mélange blanchisse
Aouter la farine par petite quantité puis les blancs neige enfin 100 g d'amandes hachées.

Verser le tout dans un moule beurré.
Recouvrir de 50 g d'amande grossièrement hachées
Poudrer de sucre.
Cuire à four moyen vingt minutes.
