Spicy fish cakes...... do you have a good recipe?!


Question:

Spicy fish cakes...... do you have a good recipe?

Ive just made some spicy fish cakes (made it up as I went along) with fish, mashed potato, onions & chilli flakes.
They were ok but not brilliant.
I didnt use any egg, is this necessary?
When I fried them (in olive oil) they fell appart a bit.

Any ideas?
Also any ideas as to what I can serve with them? (Nothing too unhealthy, I have a strict low fat diet.)

Easy to make, appetizer or finger food, these hot and spicy little fish cakes are not only delicious but also healthy, and kind on the waistline!!!

1 lb white fish fillets
1 red chili pepper or green chili pepper, de-seeded and chopped finely
2 ounces green beans, chopped very finely
2 spring onions, chopped finely
2 tablespoons coriander leaves, and roots chopped finely
1 tablespoon Thai fish sauce
4-5 fresh kaffir lime leaves, finely shredded or 1 tablespoon fresh lime juice
1/2-1 tablespoon Thai red curry paste, more if you like it really hot
oil (for frying)

1. Cut the fish into chunks, put in your food processor with the rest of the ingredients, except the oil, and blend using the on/off technique until you have a minced texture but not a paste.
2. Remove from the food-processor bowl to another dish.
3. Take approx a dessert spoon full of the fish mix, with wet hands form into balls then flatten them with the palm of your hand into cakes.
4. Leave them in the fridge, covered, to firm up for an hour or more.
5. When ready to cook, heat up the oil and fry the little cakes about 1 minute on each side.
6. Drain on paper kitchen towel.
7. Serve with a Thai dipping sauce**There several recipes on the site.


Mango Salad Recipe #24779
It really is very beautiful to look at, not to mention eat! Perfect with Indonesian and Thai dishes.

2 ripe mangoes
1/4 red onion, thinly sliced
1/2 red bell pepper, julienned
1 lime, juice of
lime zest (optional)
fresh cilantro

1. I find the easiest way to cut up mango for this is to cut off as much as you can, slicing along the side of the pit.
2. You can tell what way the pit grows by its shape.
3. Score the mango halves lengthways, then crossways, into 3/4 inch cubes, going through to the skin, but not through it.
4. Turn the mango halves inside out and slice off the cubes.
5. Toss with remaining ingredients.


Thai Style Broccoli Salad Recipe #68621
This is a fast, easy side dish thats colorful and very tasty! You can always adjust the heat factor or even add sliced cooked steak or chicken for a whole meal dish.

1/4 cup chunky peanut butter
2 tablespoons sugar
1 1/2 tablespoons hot water
1 tablespoon fresh lime juice
1 tablespoon soy sauce
1 1/2 teaspoons sesame oil
1/2 teaspoon red pepper flakes
2 tablespoons canola oil
3 cups fresh broccoli florets
1/2 cup juliened red bell peppers
1/2 cup thinly sliced onions, wedges
1 clove garlic, minced
1/4 cup chopped peanuts

1. In a small bowl combine the peanut butter, sugar, water, lime juice, soy sauce, sesame oil, and pepper flakes.
2. Whisk until well blended and set aside.
3. Heat vegetable oil over medium high heat in a large skillet or wok.
4. Add the broccoli, bell pepper, onions, and garlic.
5. Stir fry for 4 minutes or until vegetables are JUST tender crisp.
6. Remove from heat and stir in the peanut butter mixture.
7. Toss well to combine, sprinkle on chopped peanuts and serve hot or at room temp.
