NEED ANSWER ASAP is ketchup safe to eat if it has been opened and not refrigerated?

It's been sitting in the cupboard open for about 3 weeks. Is it safe for my daughter to eat or do you think it's laden with bacteria?


Answers:

Ketchup is safe to eat after sitting unrefrigerated. The total acidity and salt combined with bacteriocidal effects of some spices and the low amount of available water prevent the growth of known pathogenic bacteria.

Any bacteria that would grow and possibly spoil ketchup are similar to those that are used to make yogurt. Other than those, only yeast or mold could grow.

We tell folks to refrigerate ketchup to preserve the flavor and to minimize the risk of spoilage by yeast or mold, not for health reasons
