Does anyone have the Louis de Gouy recipe for Rice Pancakes? Just his recipe only, please?!


Question:

Does anyone have the Louis de Gouy recipe for Rice Pancakes? Just his recipe only, please?

The reason I am asking is that the basic batter is just right for holding up the cup of cold, cooked rice called for in the recipe.

It also will convert to doing the same for a cup of cottage cheese which makes it even more versatile, since that can go both savoury or sweet .....in other words, you could slide over a nice tomato sauce for dinner, or you could add spice, etc for a sweet pancake .... or fresh herbs ...or grated cheese ...

In addition, the basic batter will stand on its own, just as a pancake. Unfortunately, it has baking powder in it, but what to do?

Answers:

LOUIS DE GOUY RICE PANCAKES

1 c. flour
2 1/2 tsp. baking powder
3 tbsp. sugar
3/4 tsp. salt
1 egg
3/4 c. milk
3 tbsp. melted butter
1/2 c. cooked rice

Mix all the dry ingredients together. Then add egg, milk, melted butter and rice. Cook in the frying pan on medium heat. Serve strawberry jam and whipped cream on pancakes or use pancake syrup. Makes 11 small pancakes.
