How do you freeze collard greens and cabbage?
I have a bunch of collard greens and a cabbage that I can't eat right away and I was wondering how to freeze them correctly.

You freeze them the same way you freeze spinach:
Select young, tender green leaves. Wash thoroughly and cut off woody stems. Water blanch collards 3 minutes and all other greens 2 minutes.
Don't skip the blanching stage. It's *very* important.
Cool, drain and package, leaving 1/2-inch headspace. Seal and freeze.
This assumes you're using freezer boxes. If you are using zipper bags, lay them flat on cookie sheets (or half-sheet cake pans) and stack the sheets atop each other in the freezer. That gives you flat sides to the bags. Once they are frozen hard, unzip the bags and try to eliminate any air that you can; that will minimize freezer burn.
Once I rezip the bags, I stack them neatly, and return the cookie sheets to the kitchen before my wife gets mad because she can't find them.
