This is best done in a cast iron skillet, but any kind will do in a pinch! Make sure you let the steak sit out about 20-25 minutes before cooking - rub it down with a little freshly ground black pepper first. Preheat your oven to 250F. Heat about a tbsp. of vegetable or canola oil in your pan on medium-high heat, and get it good and hot. Add the filets, let sit about 4 minutes, and then turn over for another 4. Transfer to oven and cook about 10 minutes. Let steaks sit about 5 minutes before serving to let the juices redistribute. This always works great for me with 1 1/2 inch filets done to medium rare...you may have to adjust depending on how well you like yours done and how thick the steaks are!
