OLD FASHIONED TEA CAKES

1 c. butter
2 c. sugar
3 eggs
4 c. flour
2 tsp. baking powder
1 tsp. vanilla
1/8 tsp. salt

Cream butter and sugar. Add slightly beaten eggs, flour, baking powder, vanilla and salt. Roll on floured board and cut. Sprinkle with sugar and bake at 400 degrees for 12 to 15 minutes.
Makes 9 to 10 dozen depending on size. This will make a fairly thick tea cake. For thinner, roll dough thinner.



RASPBERRY JAM SLICES

2 c. flour
3/4 c. butter (1 1/2 sticks softened)
2/3 c. sugar
1 tsp. vanilla extract
1/2 tsp. baking powder
1 egg
1/4 c. raspberry jam

Mix all ingredients except jam with mixer at low speed. With hands, shape dough into ball and divide into 4 equal pieces. On lightly floured surface (powdered sugar works better as the dough doesn't get as tough as when using flour), roll 1 dough piece into a 15 inch long log. Place log on ungreased large cookie sheet. Pat log into 15 x 1 1/2 inch rectangular strip.
With finger or handle of wooden spoon, mark 1/4 inch deep indentation lengthwise down center of strip. Repeat with second strip of dough, placing it at least 3 inches away from 1st strip on cookie sheet. Evenly fill indentations in each strip with 1 tablespoon jam. Bake 20-25 minutes at 450 degrees.

With pancake turner, remove strips to wire racks. Cool about 30 minutes and cut strips into 15 diagonal slices. Cool slices completely on wire rack. You can use any jam that you like. Makes about 5 dozen cookies.


GOLDEN HONEY ROLLS

1 c. milk
1/2 c. cooking oil
2 tbsp. honey
3 1/4 c. flour
1 pkg. active dry yeast
1 tsp. salt
2 eggs (reserve 1 white for topping)

TOPPING:

1/3 c. sugar/powdered sugar
2 tbsp. butter
1 tbsp. honey

Self-rising flour is not recommended.
In saucepan, heat first 3 ingredients until warm (120 to 130 degrees). Lightly spoon flour into measuring cup; level off. In large bowl, blend 1 1/2 cups flour, yeast, salt, eggs and warm liquid. Beat 3 minutes at medium speed. By hand, stir in remaining 1 3/4 cups flour. Dough will be soft and sticky. Cover; let rise in warm place until light and doubled in size, 45-60 minutes.

Generously grease two 8 or 9-inch round cake or pie pans. Stir down dough, beating 30 seconds. Drop tablespoonfuls of dough side by side in single layer in prepared pans, making about 10 rolls per pan.

Combine topping ingredients and drizzle half over rolls, cover; let rise again in warm place until doubled in size, 20-30 minutes. Drizzle remaining topping over rolls before baking.

Preheat oven to 350 degrees. Bake 25-30 minutes until golden brown. Immediately remove from pan. Makes about 20 rolls.



BACON 'N EGG LUNCHEON PIE

1 (9 inch) pie shell
5 eggs, beaten
1/4 tsp. pepper
2 1/2 c. light cream
1 c. frozen peas
16 slices bacon, cooked and drained
1 tsp. salt
1 c. Swiss cheese, diced

Crumble bacon into pie shell. Beat eggs, cream, salt and pepper. Mix in Swiss cheese and frozen peas. Pour into pie shell. Bake in 375 degree oven for 40 minutes.



REAL ENGLISH SHEPHERDS PIE!

1 onion, diced
1 tablespoon olive oil
1 lb. lamb, minced
1 clove garlic, crushed
1 large carrot, diced
1 beef stock cube
1 lb. chopped tomatoes
1 tablespoon corn flour
3 tablespoons tomato puree
pinch of salt and pepper
2 lb. potatoes
1 stick butter

This is how to make a real English shepherds pie, made with lamb. If made with beef, it would be known as cottage pie.
Firstly, heat the olive oil in a pan, add the onion, garlic and carrot and cook until soft. Add minced lamb and stock cube, then cook until the mince is brown and shows a crumbly texture. Stir in the tomatoes and tomato puree, and add the corn flour. Leave to simmer, stirring occasionally, for about fifteen minutes, or until thickened.

Meanwhile, peel and chop potatoes and boil until soft, then mash them with the butter and salt and pepper to taste.

Put the filling into a deep dish, then top with the mashed potatoes and put under a warm grill (broiler) until the top is brown and crisp.

Delicious topped with melted cheese. Enjoy!



SPIRAL CHICKEN PASTA

2 chicken breasts (cooked and cut into cubes)
1/2 teaspoon Portuguese spice
1/2 teaspoon Cajun spice
2 tablespoons soy sauce
1 medium size onion
1 clove garlic (fresh)
2 cups spiral pasta (cooked as directed)
half (each) green, red and yellow pepper
1/2 cup of mixed vegetables
2 tablespoons olive oil

Warm oil and add onions and fry until soft. Add spices and chicken. Sauté for 7 minutes or until chicken is done. Add all vegetables and continue to cook for 10 more minutes.
Cook pasta according to package directions. Combine the chicken with the pasta and bake for 7-10 minutes in oven temp 325°F.

Serve with green salad and garlic bread.
