What is your favorite way to coddle eggs?

What do you have with them?


Answers:

Use a good quality coddler with a screw-on lid.

Butter the entire inside (butter, nothing else). Butter the threads too. When you put the lids on, screw them snug, then back off 1/8 turn. Never use the lifting rings for anything but lifting.

I chop a little bit of fresh garlic chives into the coddlers next, then add two eggs to each. Add fresh ground salt and peppers, and a dash of turmeric.

Place in boiling water bath about 3/4 as deep as the coddlers for 7* minutes, remove and take off the tops. Stir with a spoon. Allow to sit three minutes, stir again and serve in the coddlers.

I serve them with lots of things but my own favorite is a fried slice and some fresh fruit. In cold weather, with kippers.
