I know that it might seem impossible to make a cake w/ no sugar or flour, but I have a recipe that uses almond flour, splenda, and lf cream cheese (among a few other ingred), and it turned out AMAZING, so I know it is possible. I just wondered if anyone out there knew of others besides that. I generally would stick to ground nuts instead of flour, or splenda instead of sugar (or for at least half the sugar).

Answers:

When I was a chef I used to make a flourless chocolate cake, that can be made with carob.

For the flour portion I used ground almonds and potato starch, you separate the eggs, then mix the the almonds, pototo starch, the melted choclate (semi sweet or milk or both) or carob and the yolks, fold in the beaten white, I would use fine sugar or honey in the whites. I baked it in a spring form pan, it is easier to get out, but a tart pan or 8" cake pan is fine, just be careful removing it.

Bake it at 325 for 45-60 minutes, it should test clean with a toothpick or small knife, you can ice it, but melted chocolate or a dusting of powdered sugar is fine too, serve it with whipped cream or ice cream.
