Do toffee bits melt?
Yesterday I baked a Devil's Food cake and I mixed Heath toffee bits in with the batter. After the cake had baked and cooled, I was surprised to find there were no toffee bits in it. I didn't think toffee would melt in a cake like that. Anybody else have this experience with toffee?

The reason I'm so surprised is that is was hard toffee and yet there was no trace of it. With butterscotch and chocolate chips you can still tell where the chips are. The cake was delicious though, the trick I use is mixing in a little Folger's Instant English Toffee Cappucino mix.

Yes, they would incorporate nicely into your cake and make it taste carmelly and very moist. If you take a piece of toffee and nuke it, it melts and bubbles to the original consistency that it takes before it is cooled. I made cookies with toffee bits in them and they melted and burnt around the outside of the cookies. Not so cool, but the unburnt parts were rather tasty! You just had an "Ah-ha!" cooking moment. Sometimes experiments turn out better than you expected!
