How high should the gas be up to be 300 degrees?!


Question:

How high should the gas be up to be 300 degrees?

This is a very specific question...

I have a recipe that says to "heat an electric skillet to 300 degrees." I don't have an electric skillet, so I will have to do it in a regular skillet over a gas stove. What level do you think the heat needs to be to reach about 300 degrees (med, med low, etc.)? I don't have a thermometer.


Answers:

It depends on the vessel you are using. Cast iron will heat hotter at lower heat and maintain the heat evenly. Stainless tends to need higher heat and the temperature will be hotter at the bottom of the pan.
