Is it cheating to add stocks in the soup?
Can people tell if you add it?
For example, I'm cooking Pho and on the direction it said you have to cook at least 6 hours to make the soup

No that's fine a lot of people do that I mean who except a professional chef has time to make something like that. Just make sure you use a good stock one that you know you will like. If you taste it and it seems to salty, just cut up in 4ths a potato or 2 and let them cook in the soup for a while and that should take out some of the saltiness just remember to take out the potatoes. :)
