Cake with flaxseed??!

Question:

Cake with flaxseed??

Has anyone ever made cake with ground flaxseed? I love flaxseed pancakes and that got me thinking if I could possible put some in my cake.
I am making a cake in a month or so and planning on using splenda and whole wheat flour(plus all the other normal ingredients), but I was just wondering if anyone had used flaxseed too/or in place of some of the wheat flour. Also if you have any suggustions when using splenda in cake, since its different then using regular sugar. Thanks a bunch for any and all input! ps I am on the south beach diet in case anyone is wondering. ;)

Answers:

I love flaxseed especially the toasted one. I think its smell is like sesame plus pumpkin seed.

I'm not sure about the splenda in the cake. I think the splenda tastes sweeter than regular with the same amount or weigh. Its sweet is not similar to regular sugar as well. If you are not sure about its taste, use half splenda and half regular sugar. Then, instead of using real butter, use non-fat or low fat butter. That way, you don't feel that guilty puting part of regular sugar in your cake.

Another way is to put less sugar or splenda and use some dried fruits instead. Choose dried fruits which are sweet, such as raisins, apricots, pineapples, or prunes. Watch for "no sugar added" on the label of the fruits. This way, you will get glucose from the fruit instead of sucrose from sugar. And of course, glucose is way better and faster absorbed than sucrose.
Good luck.
