Toasted Coconut ice cream.
2 cups heavy cream
6 eggs, separated
1 tsp vanilla extract
1 1/2 cups icing (powdered) sugar
1 cup shredded coconut, toasted until pale and golden, and cooled
whip the cream until thick, then whip in the egg yolks and vanilla. In a large bowl beat egg whites until stiff, then whisk in sugar a spoonful at a time until all added. Fold the toasted coconut into the cream mixture, the fold in the egg whites. Freeze until firm, or place in ice cream maker until firm.
