Whats the best way to make meringue?


Answers:

Meringue =

3 egg whites

1/4 tsp cream of tartar

Dash of vanilla extract

2 TBS sugar



Traditionally, a copper bowl is used, but any large mixing bowl will work fine. Using a whisk or a hand mixer, beat eggs vanilla, and cream of tartar untill whites form stiff peaks. Add in sugar 1 TBS at a time and mix till completely incorporated.

TIP: It is VERY important that absolutely NO YOLK escape into the whites.

TIP 2: It is very important that the mixing bowl be free of oils or any type of fat. This will cause the meringue to break down. Wipe the bowl out completely with vinnegar and a paper towel to remove any excess fat or oil.

TIP 3: Other recipes call for more sugar but avoid that temptation. The meringue can only hold a small ammount of disolved sugar in suspention. If you use more sugar than the eggs can hold, the melted sugar will release from the meringue resulting in a sugar water slick between the filling and the meringue top and droplets of sugar soloution to bubble out on the top of the meringue.
