OK to freeze hash brown casserole?!

Question:

OK to freeze hash brown casserole?

2 days ago I made a breakfast casserole in advance for a guest who will eat breakfast here in 3 days. The casserole has hash browns, to which I added eggs, cheese, and bacon bits. I covered the glass dish with foil and stuck it in the freezer, but now I'm wondering if it will still be good, once it is frozen, thawed, and re-heated?

Answers:

I do this all the time. It is actually better reheated. Freeze it in a good container to avoid freezer burn. When you reheat it, add some cheese to zest it up a bit.

I am an avid cook and cook for two people all the time, so we always have leftovers. I have discovered that the trick to freezing thing is keeping them dated and using them as soon as possible, or else they go from being stored in our freezer to the trash can :) .
