What is the best oil to use for deepfrying frites?
I soak potatoes in cold water, dry then fry twice. They taste great but they're not crispy.

you don't have to soak them..
The trick is to fry them the first time to cook them, low heat.
I doubt you've messed up this part.
The second frying is when you need to make sure the oil is very hot. Then put them in a small number at a time so they don't cause the oil temp to drop too much. Now when they turn the color you like they're done and get them out as quick as possible and place on paper towels.
If they aren't crispy then you oil isn't hot enough or your letting them set in the oil after they are finished and they will then start soaking up the oil.
Oil doesn't really matter as long as its an oil that can withstand high temps. corn oil, canola oil, peanut oil, any work well... peanut will allow you to get the oil even hotter than the others but if you use it you and go for the mega heat you may find the fries are to crisp for your taste.
