All about Chorizo-?

I love this stuff, but I can never cook it right. Is it best to get the dry cured kind and add it to a sauté, or the raw stuff. I’m torn between the two. Freshly cooked sausages taste so good but they’re impossible to cook without a grill. Any suggestions? I prefer the casing to have a snap to it.
The recipe I’m trying to perfect is Chorizo with root vegetables topped with Monchego and a light mustard sauce. Usually serve it with a sour dough crusty bread. Any ideas how to best prepare the sausage?

xsquash- i never thought to roast it. when grilling, do you center on heat direct heat or cook slowly with the smoke and indirect heat?


Answers:

The simplest way I cook chorizo is to roasting it, or BBQ.

you can also cut in small pieces and fry with rice. Add some onion, black pepper and garlic.

You have a great dish there.
