Does ANYONE know what I can do with MINT EXTRACT?!?!?!?

I have Mint Extract... but NO IDEA WHAT TO USE IT IN???


Answers:

I would use it to make chocolate mint meltaways. I made these once and they are absolutely heavenly, although a bit messy in the kitchen.

First step is to make a chocolate ganache. Here is the recipe I used:

INGREDIENTS

* 16 ounces bittersweet chocolate, chopped
* 1 cup heavy cream
* 1/2 cup unsalted butter

DIRECTIONS

1. Place the chopped chocolate in a large stainless steel bowl.
2. In a large, high sided saucepan, heat cream and butter over medium high heat, stirring frequently, until it just starts to boil. Watch carefully as it will boil over pan in a matter of seconds. Immediately remove from heat and pour over chopped chocolate.
3. Stir until chocolate is completely melted and mixture is smooth. Cool completely and then store in refrigerator. Ganache can be reheated in a double boiler over simmering water.

Pour your mint extract into the melted ganache. Then let it cool completely, and I roll it into balls and set it on wax paper over a cookie sheet. I then put the cookie sheet in the freezer until they are rock hard.

I then take some dark chocolate and melt it over a double boiler or in a large glass bowl over a smaller pan of boiling water. Using a spoon, I dip the frozen ganache into the melted dark chocolate making sure it is completely submerged. Using the spoon I put them back on the wax paper to cool.

Once they are all dipped, wash out your bowl and melt some green chocolate (you can find at Michael's Craft Stores). You don't need that much. Pour the melted green chocolate into a cloth piping bag and drizzle a little over the top of the dark chocolate mint meltaways. Make a leaf if you want to get fancy. Store them in the refrigerator and bask in total heaven of the most amazing thing you're ever tasted.
