How do you get homemade caramel sauce to turn caramel color?!

How do you get homemade caramel sauce to turn caramel color?

I've tried 2 recipes from FoodTV (one by emerill). Neither one ever turned golden color. They eventually just dried up and turned to fluffy sugar. I follwed both recipes exactly. What am I doing wrong?


Answers:

If you're making caramel and sugar gets stuck to the sides of the bowl it crystallizes the sugar causing it to get lumps and look "fluffy". To make sure that it doesnt crystallize, have a pastry brush in some water and ocasionally brush around the sides of the put to make sure that all sugar is at the bottom of the pot and not on the sides. It also takes awhile for the sugar to turn to the caramel color. You could also not be giving it enough time. Be careful though...once the sugar starts turning brown, it can get dark really fast so make sure you watch it carefully!
