Why doesn't amish friendship bread go bad?

Amish Friendship Bread is only yeast, milk, sugar, and flour. It sits out on the counter for ten days... How does it NOT go bad? Wouldn't the milk get sour? Shouldn't it make you sick?


Answers:

Amish friendship bread is much like a sourdough. The yeast feeds on the sugar and produces a gas. The process of feeding it daily keeps the enzymes in check. Much like a cheese is molded milk, the process that the yeast is doing in the fermentation process is molding the bread, but at a constant rate. Some sourdough bread companies have "mother" or starter doughs going back over 100 years or more.
