Vegetable meal ideas?

I am looking for some ideas, We eat a healthy diet but are fed up of always having broccoli, carrots and green beans with every meal. What other vegetables can I add in and any meal ideas? Must be suitable for a 4 year old as well as adults.We have tried most things but seem to have got into a rut.
Also anyone know which vegetables go well together regards getting all the vitamins we need? Thanks xx

Regarding vitamins, I've always been told that the best way to make sure you've got a good mix of everything is to use different coloured fruit and veg. From what I can remember having done GCSE Food Technology, dark green stuff contains iron, vitamin C and some vitamin B, orange - red colours contain Vitamin C and/or carotenes which combine to form Vitamin A. Nuts and seeds are good for trace elements, and tomatoes, especially cooked, are stuffed full of nutritional goodies.

My experience of small kids is that they prefer sweet tasting stuff. How about sweetcorn on or off the cob, peas, or maybe mashing carrot and swede together (a childhood favourite of mine when made with butter, and good with black pepper too!). Tell them it's white carrot and many kids will happily eat parsnip if they don't normally.

Why not try roasting a selection of vegetables and either serving on their own, with cheese/cheese sauce, with couscous, pasta, tomato sauce, or with meat if you're looking for an accompaniment? The flavour's different to boiled stuff, and can make it more interesting.

Stirfried veg is a quick fix, and not just as a main meal. I like peppers, courgettes and beansprouts stirfried with a little soy sauce as a side dish to sausages (veggie or meat), especially if I have ketchup or tomato puree in the fridge I can stir in. Cabbage doesn't have to be boring! Try stirfrying it with sesame oil and adding some soy, ginger and a little brown sugar.
