How do you bake cake-like cookies?!


Question:

How do you bake cake-like cookies?

I have experimented a lot with this, but can't see to figure out the right proportions. I want my cookies to be cake-like, light and fluffy. Is it a matter of flour proportions, related to the baking powder and/or soda? Or the amount of liquid?? Sometimes I just follow the recipe as is, and it comes out this way, but I can't re-create it.


Answers:

You need a recipe with mostly flour rather than mostly shortening. The more flour in proportion to the shortening, the lighter and fluffier the cookies will be.
