~~OK.... I know it sounds obvious to use honey, but I think it would run everywhere - which is why I want something thicker that is going to 'stay put'

Answers:

well there are a lot of different things you could do, you could use real honey which would make the cake sweet but maybe not your best bet if the cake is chocolate, or you could use caramel which you can make yourself from scratch (its really not that hard) or just melt some in the microwave or stovetop or just use caramel dip...but if you use that try thinning it out first by stirring it so it has the right honey-like consistency and caramel would go with both chocolate and vanilla cakes. also there is a recipe i like to use which you don't even really need to measure for. put a good amount of powdered sugar in a bowl and then puy in a bit of orange juice. adjust the amounts of oj and powdered sugar until it has the consistency of a thin glaze and is very light orange. then add about 4-5 squeezes of honey and stir it in. the color should darken, consistency should be a bit thicker and is should look more like honey. keep adding honey until it looks the way you like. then let it sit to firm up a bit so it doesn't run all the way down the sides of your cake, about 15 minutes then give it a light stir and drizzle it onto your cake and let it spread out itself. if some icing does run down the sides don't worry it will look more like authentic honey and look like it was homemade. or use white gel frosting and add orange food coloring
hope i helped!
