Inexpensive meal ideas:
Spaghetti, chili, shepherd's pie or cottage pie, macaroni and cheese, chicken and dumplings, beans and weenies, dinner omelets, homemade chicken noodle soup, homemade Salisbury steaks, baked chicken in BBQ sauce, pot roast, breaded turkey thigh cutlets (cheaper than breast and more moist, too, just remember to bread your own instead of buying the more expensive ready-made)
Do an inexpensive cut of beef in a crock pot or other slow cooker. Add some kind of liquid (broth, water, canned tomatoes with juice, etc.; I use a packet of onion soup mix and water) and whatever veggies you like. Let it cook all day while you're busy. Drain and thicken broth when done. Serve meat, veggies and gravy over noodles, rice, or boiled or mashed potatoes. The meat, having cooked slowly in liquid, will be more tender than you'd imagine.
Use frozen or canned vegetables for sides, fruits and Jell-o (or both) for desserts.
Don't shop for food when you're hungry! You'll probably end up blowing the budget. Basically, you should skip prepared foods and make your own. This will help to cut down on costs. Chicken and turkey are less expensive (at least around here) than beef, lamb, or fish. Pork prices are somewhere in the middle. Keep this in mind when you shop. Look for items that are on sale and use coupons, but buy things only if you'll really use them, not just because they're cheap.
