What is it liquid glucose? and how to make it at home?

I'm not so sure about that liquid glucose. What is it? I need it to make nougat. Can I make it at home?


Answers:

Liquid glucose used in baking is an invert sugar, meaning it doesn't crystallize when cooked like regular sugar does. This produces a "softer" set than regular sugar, and is why it is used for making nougat. Corn syrup is very similar to liquid glucose and doesn't crystallize when cooked. Corn syrup can be substituted for liquid glucose in some recipes. However, the cooking time will increase because corn syrup is thinner than liquid glucose.

Only large, commercial kitchens are properly equipped to make liquid glucose, or corn syrup for that matter.

Cake decorating suppliers will stock it. Some supermarkets may have it. It is available on-line from several places. Just Google it. Because it isn't available locally, even from our restaurant supply warehouse.I get mine on-line from:
