Why is it important to add salt when making cookies?

What does the salt do? What would happen to the cookies if salt was not added?


Answers:

A little bit of salt (in anything) enhances the flavors of the other ingredients without making the dish taste salty. Even when baking cookies, salt is an important ingredient. Not necessarily so important that your cookies will be disgusting without it, but it's the little things that make good cooking not just good, but GREAT.

Case in point: I made a pot of navy beans recently. I followed the recipe very carefully, unfortunately they were a little bland. So, I added a very small amount of salt to my bowl and voila! the beans tasted so much better! Not salty, just good : )
