These r by far the best chewy cookies I've ever had. These r real simple to make and take not more than 20-25 minutes to make 3-4 dozen cookies. Also, these r very healthy and they taste heavenly.
Chewy Oatmeal Raisin Cookies
Ingredients:
1 cup Butter
1/2 cup Sugar/1/3 cup splenda
1-1/2 cups Brown Sugar /1 cup splenda brown sugar
2 large Eggs
1-1/2 tsp Vanilla extract
1-1/2 cups White Flour, Unbleached
1/4 tsp Sea Salt
1 tsp Baking Soda
1/4 tsp Allspice (ground)
1/4 tsp ground Cloves
1/2 tsp ground Nutmeg
1-1/2 tsp ground Cinnamon
3 cups rolled oats, Quick/instant
1 cup Raisins
3/4 cup chopped Walnuts
Preheat oven to 375°F. Lightly grease 2 cookie sheets, set aside.
In a large bowl, beat butter, sugar, and brown sugar until creamy. Beat in eggs until well blended, then mix in vanilla. Stir together flour, salt, soda, allspice, cloves, nutmeg and cinnamon. Add to butter mixture; stir well. Stir in oats, raisins and walnuts until evenly moistened.
Drop dough by rounded tablespoons onto prepared cookie sheets, spacing about 2" apart.
Bake until cookies are golden, but center are still soft (10-12 minutes). If using 1 oven, switch position of pans halfway through cooking. Transfer cookies to racks to cool. Serve, or store airtight up to 3 days.
These r best when warm!
