How do you make a chicken in the oven?

Answers:

Wash the chicken, remove the giblets and neck from inside. Put it in a baking dish, season with salt, pepper, cut up some onions and a little garlic. Be generous with the pepper, you can put the giblets and neck in the pan too, so you can make a gravy after. Let it sit in the fridge for at least an hour covered with foil so that the seasonings can penetrate (I brine my chicken first by soaking in salt water for two hours) preheat oven to 350, place in oven and let cook covered for about one hour, then remove foil and baste with juices, replace foil and baste often every 15 to 20 min for the next hour. Remove foil for the last 20 mins to get color. The amount of time depends on the size of the chicken but 2 to 2 1/2 hours should do it. (I cook mine sometimes 3 I like it tender) Experiment after you taste this to see what you would like to add. You can add some water if it is not enough juice to baste with. Let the chicken rest for about 15 mins or so before you cut into it. Good Luck.
