What herbs and spices do you use in curries?


Answers:

I use a generous spoonfull of cumin, and coriander (cilantro) seeds, yellow mustard seeds, de-podded cardamon seeds and put them in a hot saucepan and dry fy them until they start to pop. Then I grind them in a pestle and mortar with a little salt. Then I throw this in another pan with softened onion, coarsley chopped garlic, chopped chillies, a good teaspoonful of turmeric powder, even more ground coriander and some ground pepper. I put whatever I am "currying" in next and a tin of chopped tomatoes, then when it is all cooked I throw in a load of coriander leaves. Sorted.
