What will happen if i make brownies with only on egg?

Depends on how many you needed; they'll just be dry as heck. If you need two and only have one try adding some vegetable oil (1 1/2 tbsp oil= 1 egg) I don't suggest doing that as a substitute for more than one egg because then it won't set (jiggly brownies anyone?) Try reducing the other ingredients to compensate (instead of 3 c of flour use 1 1/2 c), that way the brownies will come out the way it was supposed to.
