It starts with the meat...... if you can get your butcher to mince or grind some chuck, this comes from the front end of the cow, it is very tasty meat but tough unless minced. Add between 10 and 15 per cent fat to the mix, ie if you have a kilo of meat add 100 to 150 gms. Add 2 percent salt ie 20gms per kilo, add freshly ground black pepper ( approx 15 ml) grate i small onion through the cheese grater, 2 or 3 cloves of garlic (through the small grater section) add a large tablespoon of mustard then add a handful of well chopped fresh herbs like parsley, sage rosemary and thyme (lalalala), then if you can leave them over night, well covered on the fridge and make them the next day...... with this recipe I will one day rule the world......................
