How do I get cheese to melt properly?!

Question:

How do I get cheese to melt properly?

Every time I make a dish and add a little cheese, it ends up clumping and never melting right.

Answers:

What do you consider "melting right"? If you are expecting cheese to produce a cheese sauce, or to integrate into a liquid, it's not going to happen without a lot of extra help. It's food chemistry: The fat and proteins of the cheese do not mix with water.

A cheese sauce requires careful preparation, usually starting with cooking fat and flour, then gradually adding milk, then gradually melting in cheese, stirring constantly. This allows the cheese to pull apart and bind with the other elements to create a creamy sauce. There's a lot of chemistry involved. You can google recipes to see.
