Is there any reason not to brine chicken Tikka before grilling?!

Question:

Is there any reason not to brine chicken Tikka before grilling?

I know the marinade is supposed to act as a tenderizer, but frankly. my husband and I are not all that great at grilling and we're trying not to end up with chicken jerky. (Yuck.) Will a salt brine beforehand help? Have you tried it?? Thanks.

Answers:

You really don't need to brine chicken Tikka. In fact, if you do, it may very well wind up tasting nothing like chicken Tikka The marnade for the chicken is made with yogurt and I usually let it marinate overnight. Make sure you poke a bunch of holes in the chicken with a fork to let the marinade really work its way into the meat. This will make it nice and juicy - and it should be buttery soft by the time you cook it, as long as you don't cook it too long.
