What can I do with this frozen chicken?!


Question:

What can I do with this frozen chicken?

I am trying to cook some frozen chicken thighs. I can't put it in my oven, because I got grease all in there bad the other day and still need to clean it. So I am trying to cook frozen chicken in a big pot stovetop. I was going to put cream of chicken or cream of something at least in there, b/c since they are frozen I dont' think they would cook well without something for it to simmer in. I can not find cream of anything in there except for cream of potato soup. I also have various tomato sauces, diced tomatos (but I don't think I want to go that direction unless it's my only choice), canned white gravy with sausage, condensed chicken noodle soup and various canned veggies and sourkraut (sp?). I do not see any broth, just canned soup. Oh, yeah, I also have beans in there and chilli, and peach pinaple salsa in the fridge. Can anyone help me do something here with my somewhat limited resources?


Answers:

Hopefully you have some rice too and an onion - put 2 tablespoons oil in the bottom of a warm pan and bring up the heat add onion and cook until glossy place chicken in pot and reduce heat by half - cover and simmer for 20 minutes. After 20 minutes (hopefully the time it took to cook the rice) add peach pineapple salsa and recover - let simmer 5 minutes more then serve over hot rice.
