What's your favorite recipe for chicken enchiladas?

Answers:

Ok - the way I make chicken enchiladas is pretty easy:
1. If you have left over roasted chicken, that is best (or u can buy those roasted whole chickens in your grocery deli). I like using the roasted chicken, because i just shred the moist meat off of the bone with a fork, for shredded chicken. I add this to a pan of sauteed onions.

If you are using chicken breast instead, that fine, but it will just be chunkier (which is good as well). If u use chicken breast, season with salt and pepper, chop up the breast and sautee it with onions.

2. Now that u have cooked chicken, pour a large can of enchilada sauce over it and heat on low-medium for a couple of minutes. Leave some sauce out for the tortillas (1/4 of can). This is when u can add chopped chilies and black olives, if so desired.

3. Remove from heat and add a whole bag of cheese to the mix (leaving some out for topping the enchiladas). Sometimes, I add finely chopped lettuce to it to, for some extra texture.

4. In a large baking dish, pour half of the reserved sauce into the pan, and dip both sides of your tortilla in it.

5. Put some spoonfulls (to your desired stuffness) into the tortillas and roll up. Repeat this till the pan is full.

6. Pour over remaining sauce and cheese.

7 Garnish with sourcream and olives.

8. Bake at 375 degrees for about 10 min. Its already cooked, your just heating up the sauce a bit more and melting the cheese!
