What's your favorite Potluck success? Do you remember the ingredients?

TODAY, it was almost 6pm, and I had to get my family fed. I took out some frozen boneless/skinless chicken breasts(about eight 3.5 oz breasts), and threw them in HOT water. After about five minutes, I drained the water, because they were just soft enough to cut. I cut them into small cubes.

In a large skillet, on medium/med-high heat, heat 1/4 cup of cooking oil(preferably olive oil). Throw in the chicken breast cubes, and season generously with onion powder, garlic powder, a little salt, lemon pepper,(or black pepper, to taste). I also used 2 packets of Goya Sazon with Saffron. Give it a good stir, and cover skillet with lid, for about 5 minutes. Drain majority of the juices and return the skillet to the burner. Add about 1/2 cup of non-hydrogenated butter like spread, like Smart Balance, and stir until melted. Sprinkle 2/3 cup of white all-purpose flour over the chicken and stir until the chicken is pasty and add quickly, 4 cups of skim or 1% milk, stirring as you add it.

when sauce begins to thicken, add about 1 lb of either regular cheddar cheese or American cheese slices-more or less to taste. Stir until cheese is melted. Add one can each of peas and sliced carrots, draining the juice before adding. Stir until blended in and remove from the heat.
Serve over rice, toast, biscuits, or corn bread.

I take some regular ground beef, fry til browned drain off fat, add some Worcestershire sauce, Heinz ketchup, black pepper, cayenne pepper, a little salt, some garlic and onion powder (it's more convenient sometimes). Add some Kraft mac-n-cheese to it and mix altogether, and add some shredded cheddar marble cheese and serve. It is really filling, delish in fact..and takes all of 25 minutes to make. Or to make a different dish, I use ground beef again, use the worcestershire sauce, add some ketchup, then add some cooked 5 minute white rice (with soya sauce added), mix together and another meal is ready. Simple but very tasty.
