Answers:

This is the only way that I make chili. I cut stewed beef in very small cubes and season with cumin, chili powder, sesoning salt and oregano. 1 would say at least 1 tbsp. each of these. I like more cumin and chili powder, but I like it spicy. You can also just use 2 packages of chili seasoning. Generally I do this the night before. The morning of I put this in my slow cooker with 1 can each of tomatoe sauce and diced tomatoes. Along with 2 - 3 chipolte peppers in adobo diced finely. Again, this depends on your taste I like mine spicy. 1 large diced onion goes in next with 1 can each light and dark kidney beans. Add one sprig of fresh thyme (you don't need to take them leaves off), 1 bay leaf, 2 whole garlic cloves and 2 slices of bacon. Remove all of these before you serve. Depending on the freshness of your garlic it may just dissolve as you mix. Top the whole thing with a very light layer of seasoning salt. Put on low for about 8 hours. You can used ground meat for this, but you will need to brown the ground beef first. YUM!
