What is the best way to cook pork spareribs so they're tender?

I guess it depends upon what type of set up you have.

One thing I always recommend is that you DO NOT pre-cook the ribs by boiling. You're boiling out the flavor from the ribs and making a pork stock with the water.

Also, I personally don't like barbeque sauce (too sweet) for my taste.

If you have a smoker or a grill, cook the ribs using indirect heat. You're shooting for a cooking temperature of 200F to 250F

1. Clean and trim the ribs. Also, on the backside of the ribs, there's a thin membrane that you should peel away.

2. Apply a dry rub (or a seasoned salt or salt, pepper, garlic powder... etc... whatever you like) and let it marinade overnight. The key is to allow the seasoning absorm into the ribs.

3. In a smoker, use hickory and smoke at 200F to 250F for about 3 hours.

4. Take out off of smoker, wrap in heavy foil and bake at 250F for about 2 more hours.

If you plan to cook in the oven, then do step 1 and 2. For step 3, bake in oven at 250 for about 3 or 4 hours. Cover the pan for the first two hours and remove cover for the last hour or two to brown the ribs.

If you do want to use bbq sauce, brush the ribs with sauce (generously) the last hour of cooking.
