Whats more acidic, lemon juice or vinegar?!


Question:

Whats more acidic, lemon juice or vinegar?

I ask because I am making a red velvet cake and all the good recipes call for buttermilk but when I went to the store they didn't have it so I need to use a buttermilk substitute. And I read that you can use lemon juice or vinegar in regular milk. However since buttermilk is more acidic than regular milk its a little off so the more acidic the better.


Answers:

they're about the same (pH 2.4)... although since citric acid typically acts as a pH buffer, I'd go for the vinegar...
