14-Day Pickles mold in the brine?

I have an family recipe for 14-day Pickles. It says if mold grows on the surface of the brine during the 7 days of brining I should scoop it off. I never canned anything before and this sounds really unappetizing.
So is this correct and how do you keep from getting mold in the first place?


Answers:

This does sound correct. I've made homemade sauerkraut and there's been mold on the surface. It's totally natural and if the pickles are totally submerged in the brine, they'll be fine. Just scoop it off and you'll be ok. If you think about it, sauerkraut and pickles are just fermented vegetables. Just think about bleu cheese too, those veins are true mold!
