I need help with the cheese part on top of a lasagna !!?

im having problems making the cheese part on the top part of a lasagna...all this while i just sprinkled mozarella cheese on top of the lasagna but it tends to harden so i have to keep on reheating.

the ones (lasagna) i had at restaurants...the cheese part is very fluffy and thick !! and creamy too (its not harden). How do make that ?? and what type of cheese do you use?? please help!!! thanx a lot !

they might be making a "beshamel" topping... some lasagnas use this..
you make something like white cream gravy..
you take 2 tablespoons of ordinary all purpose flour
2 cups of milk
2 tablespoons butter
salt/pepper
1/8 cup grated parmesan cheese
melt butter in sauce pan on medium/high heat
sprinkle in flour and stir into butter making paste,
then almost immediately, using a wire whisk or fork, slowly pouring milk in, and whisking briskly.. keep doing this till all milk is in and incorporated into the flour.. making sure no lumps form... keep stirring till this mixture thickens.. like cream. then remove from heat and stir in parmesan cheese. and sprinkle black pepper in.. taste to see if salty enough from parmesan cheese, if not, add a few dashes of salt.. then you can pour this over your layered lasagna (top layer) then sprinkle with a bit of mozarella cheese on top of this cream.. bake as usual.. this comes out with a nice thick creamy layer on top..
