... fancy dessert that can be used for an outdoor party. It needs to be something impressive and that can hold up on a hot day.

how about cutting out a whole watermelon to look like a basket with a handle .then adding several kinds of melon balls and fresh fruit. sit it in a large flat pan with crushed ice. someone did this for me once and it was spectacular.
