How to make muffins?

How can I make sweet potato muffins? I had them in North Carolina at the Riverside Steak and Seafood restaurant in Swansboro, and have been trying to reproduce them. What is a good recipe for them? They have to be quick and easy, please! Thank you in advance.

Sweet Potato Muffins
.
Sweet potato muffins with butter, shredded sweet potatoes, milk, spices, and walnuts or pecans.
INGREDIENTS:
6 tablespoons butter, softened
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cup sifted all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2/3 cup evaporated or regular milk
1 1/2 cups peeled finely shredded sweet potato
2/3 cup chopped walnuts or pecans
PREPARATION:
In a large mixing bowl with hand-held electric mixer on medium speed, beat butter and sugar until light and fluffy. Beat in egg and vanilla until well blended.
In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.

Stir into the butter mixture alternately with milk, mixing just until dry ingredients are moistened. Stir in sweet potato and chopped nuts. Spoon batter into greased muffin cups, filling about 2/3 full. Bake at 375° for 25 to 30 minutes, or until centers spring back when pressed with fingertip. Cool in pan on rack for 5 minutes. Remove from pan and serve muffins warm. Makes about 1 dozen sweet potato muffins.

Mississippi Sweet Potato Pie

A sweet potato pie recipe, made with butter and sweet potatoes, along with vanilla and cinnamon.
INGREDIENTS:
4 ounces butter, softened
2 cups cooked and mashed sweet potatoes
2 cups granulated sugar
1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
1 teaspoon vanilla
3 eggs, beaten
1 1/2 teaspoons cinnamon
2 prepared pie shells, unbaked
PREPARATION:
Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set.
Makes 2 pies.


Sweet Potato Pie

INGREDIENTS:
1 unbaked pastry shell, 9-inch
3 cups cooked, mashed sweet potatoes
1/4 cup butter
1 1/4 cups sugar
2 large eggs
1/4 cup evaporated milk
1 teaspoon nutmeg
1 1/2 teaspoons cinnamon
PREPARATION:
Combine hot potatoes and butter in a large mixing bowl; mix well. Add sugar and eggs; blend with mixer on low speed until smooth. Add milk and spices. Blend well and pour into pastry-lined pie shell. Bake at 350° for 45 to 50 minutes, or until firm. .

If desired, top with miniature marshmallows the last 8 to 10 minutes of baking time and bake sweet potato pie until
golden brown.


Sweet Potato Biscuits
..
INGREDIENTS:
3 cups flour
2 heaping tablespoons baking powder
1 teaspoon salt
1 cup vegetable shortening
2 cups mashed cooked sweet potatoes
1/2 cup sugar
1/4 cup milk
PREPARATION:
Sift together flour, baking powder and salt. Cut in shortening with fork or pastry cutter. Combine warm sweet potatoes and sugar, mixing well. Add milk. Combine sweet potato and flour mixtures. Blend well.

Place on floured surface and roll to desired thickness or about 1/2 inch thick. Cut with biscuit cutter. Bake on lightly greased baking sheet at 400° for 10 minutes, or until nicely browned. Makes about 2 1/2 dozen sweet potato biscuits.
