Answers:

marinade tonight in:
2 whole diced onions, some salt and pepper, olive oil, spices if you have.(cayenne,paprika,turmeric... of each. smother the joint with english or french mustard and leave for tonight.
tomorow when you come to cook, 1st sear the meat in a frying pan to seal in the flavour. place the onions from your marinade in the roasting tin, sit the beef on the onions and cover with tin foil, place in pre heated oven and cook at gas mark 3/4 or 200c (30mins per lb then give an extra 30 mins) keep checking and basting meat and remove the tin foil 30mins before cooking time is up to give a nice colour. remove and leave to sit for 20mins.
make a gravy with the remains of your roasting tin, pour in hot water and bisto, oxo and reduce down to a lovely sauce.
serve with, yorkshire puds, roast pots, peas and carrots.
they will be well impressed. paulie
