How do you make your pancakes work?

Like how do you get them to not stick. Or how do you make them right like on tv.


Answers:

I make my pancakes from scratch, they are very easy. First, to stop them from sticking to the pan, I use a cooking spray, then when the griddle is hot, I use a paper towel to wipe off any excess. The first batch usually is a little different than the rest, but still good. I always add vegetable oil to my recipe, that helps, too. Mixes already have shortening in them, so you don't need to add that.

I think the secret to really good pancakes, whether from scratch or from a mix is to separate the eggs before adding. Whip the egg whites until stiff, and when the other ingredients are all mixed, fold the egg whites in gently. It makes for a very light fluffy pancake. I always add a splash of vanilla either to my homemade or a mix, and a couple tablespoons of sugar to a mix.
