Recipes that make great leftovers to take to work for lunch? or easy lunch ideas.?

I don't really like to take sandwiches, and have a microwave.
So know of recipes that the leftovers are just as good (or better) than the day they were cooked?
Or other easy lunch main dishes that aren't sandwiches?


Answers:

Fried Rice- this is a great way to use up left over rice and meat from dinner. In a heated wok or skillet add sesame oil, let it heat. Add chopped onions to the oil, brown. Put onions in a finger bowl. Scramble at least one egg (I like 2) in the wok. Add the onions back in once the eggs are done. Add the rice. I put leftover veggies in mine (like broccoli, green beans, carrots, peas). Let it heat well. Add soy sauce, enough to make the rice brown. Mix well. Add the meat to it. To top it off, add a few toasted sesame seeds.
I make a big batch on Sunday and eat it all week for lunch.

Beef stew---the longer it sits in the fridge the better. I make this Sunday and we don't eat it until at least Monday, it's an excellent cold weather food.
In a stew pot, cook the beef on med-high heat in water. I use about 1.5 lbs. of stew meat, 1 cut up onion and 6-7 cups of water, salt and pepper. Let it cook for about an hour. Once the meat is tender, add diced potatoes, 5 stalks of celery. Let that cook for about 15 minutes (gives the raw veggies a head start). Add 1 can of each, corn, green beans, peas, diced tomatoes. Let this simmer for about 30 minutes. Put in the fridge and enjoy...the next day.

I also like to make chili or lasagna and eat on it all week.
