Does anyone have any quick, economical, & healthy meal ideas?

i'm trying to stick to a *very* strict budget for the next year, but i can't have things like Ramen everyday!! (i'm pregnant now, and will be breastfeeding later--so the healthy part is a must!!)

any ideas??

oh yeah! i've got the best cookbook with a section on beans! they ARE a staple!!
i always toss in a package of frozen chopped spinach too, some grated carrots. yum! i am a crock pot bean soup junkie! lol..


Answers:

Spaghetti and Cheese

Spaghetti

Sharp and Mild cheddar cheese

Large can of Pet or Carnation Cream

1 egg

1 stick of butter

salt and pepper to taste

Cook spaghetti, put slices of butter in the bottom of glass baking bowl.

Put layer of spaghetti and then layer of butter and layer of cheese. I put 1 piece of sharp and 1 piece of mild all around the bowl. Put spaghetti, then butter, then cheese until the bowl is full. Mix cream and egg in seperate dish and add the salt and pepper to this mixture and pour over the other. Cook at 425 degrees until brown on top. (****DON'T FORGET TO SPRAY THE BOWL WITH NON STICK SPRAY SO IT WON'T STICK****)


One Skillet Dish

1 lb hamburger

chopped onion

garlic to taste

1-2 cans of mushroom soup

about a cup of rice

can of green beans

You might need to add water so it does not dry out.


French Bread Pizza

Loaf of Italian or French bread
Scoop it out to resemble a canoe --then fill with hamburger or pepperoni, top with pizza sauce and some mozzarella cheese - bake!

Mexican Beans and Rice

3 cups cooked rice

1 can beans, rinsed and drained (I usually use black beans, but kidney beans work, too)

1 cup salsa

1 cup cheddar cheese, divided

Mix rice, beans, salsa and 1/2 the cheese in a casserole dish (spray with Pam first so it doesn't stick). Sprinkle with the rest of the cheese. Bake at 350 or so for about 25 minutes, or until it's hot and the cheese is melted. This is good if you add corn, chopped onions or peppers, etc. I just use whatever I have on hand.

Red Potato Hash and Eggs

4 large red or Yukon Gold potatoes, scrubbed and diced

1/2 large onion, diced

salt, pepper and paprika

however many eggs each person wants

Cook the potatoes in boiling water for 8 minutes or until tender; drain. In another pan, melt a little butter or margarine (it doesn't taste right if you use oil) and cook the onion until tender. Add cooked potatoes and season to taste with salt, pepper and paprika, adding enough paprika so the potatoes turn a reddish color (hence the name). Poach the eggs and serve on top of the potatoes. This is pretty spicy, depending on how much and what type of paprika you use. We usually have it for dinner, but it's a great breakfast/brunch recipe.
